This recipe involves an active prep stage followed by a natural fermentation period. Here’s exactly how to make it.

Step 1: Prepare the Cabbage

Remove any wilted outer leaves from the cabbage. Quarter the cabbage, remove the core, and finely shred the leaves. Place the shredded cabbage in a large clean bowl.

Step 2: Add the Salt

Sprinkle the kosher salt evenly over the cabbage. Using clean hands, massage and squeeze the cabbage for approximately 5–10 minutes. The cabbage will gradually soften and release plenty of liquid. Continue until it becomes glossy, flexible, and juicy.

Step 3: Add the Flavor

Add the lemon zest, lemon juice, cracked black pepper, minced garlic, and optional honey, dill, and mustard seeds. Mix thoroughly until the flavors are evenly distributed.

Step 4: Pack the Jar

Transfer the cabbage mixture into a clean fermentation jar or wide-mouth glass jar. Pack it down firmly with a clean utensil or fermentation tamper, removing air pockets as much as possible. The cabbage should be submerged beneath its own liquid. Leave approximately 1–2 inches of headspace at the top. If needed, place a fermentation weight on top to keep the cabbage submerged.

Step 5: Ferment

Cover the jar with a fermentation lid or appropriate loose-fitting cover that allows fermentation gases to escape. Leave at room temperature, away from direct sunlight, for approximately 5–10 days. Start tasting around day 5. The longer it ferments, the more pronounced and tangy the flavor will become.

Step 6: Refrigerate

Once the sauerkraut reaches your preferred level of tanginess, seal the jar and transfer it to the refrigerator. Chilling slows the fermentation process while allowing the flavor to continue developing gradually.
