Ingredients

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Prepare wet ingredients: In another bowl, beat together the softened butter, buttermilk, eggs, and vanilla extract until smooth and creamy.
  4. Combine ingredients: Gently fold the wet mixture into the dry ingredients until just combined.
  5. Pour into pans: Divide the batter evenly between the two prepared pans and smooth the tops.
  6. Bake: Place the pans in the oven and bake for 25–30 minutes. Allow to cool for 10 minutes before transferring to a cooling rack.
  7. Prepare the cheesecake center: Beat the softened cream cheese and powdered sugar until creamy and smooth.
  8. Assemble the cake: Spread the cheesecake mixture on top of one of the cakes and stack the other cake on top.
  9. Make the topping: In a saucepan, combine the shredded coconut, chopped pecans, and heavy cream. Stir until it thickens.
  10. Finish the cake: Pour the coconut-pecan mixture over the top, allowing it to drizzle down the sides.
  11. Serve and enjoy! Slice into the cake and enjoy the flavors.
