Ingredients

  • 2 tsp baking powder
  • 1 tbsp zero-calorie granular sweetener
  • 1/2 cup nonfat plain Greek yogurt
  • 2 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • Cooking spray (for the pan)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and zero-calorie sweetener until blended smoothly.
  2. In a separate bowl, combine the nonfat Greek yogurt, eggs, almond milk, and vanilla extract. Whisk until the mixture is smooth and uniform.
  3. Pour the creamy wet mixture into the dry ingredients. Stir gently until just combined, leaving some lumps.
  4. Fold in half of the blueberries.
  5. Heat your nonstick skillet over medium heat and coat with cooking spray.
  6. Drop the batter onto the skillet to form pancakes and scatter remaining blueberries on top.
  7. Wait until tiny bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden.
  8. Transfer the pancakes to a warm serving platter and serve immediately.
