Ingredients

  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 ripe bananas (mashed)
  • 1 box (3.4 oz) vanilla pudding mix (dry)
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup whole milk
  • Optional toppings: whipped cream, crushed vanilla wafers, sliced bananas, powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan thoroughly.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and the mashed bananas until well blended.
  5. Whisk together the dry ingredients in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, alternating with sour cream and milk, mixing until just combined.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve warm or at room temperature, topped with optional toppings.

Notes

For best results, use room temperature ingredients and don’t overmix the batter.
