- 1 cup unsalted butter (softened)
- 2 cups granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 3 ripe bananas (mashed)
- 1 box (3.4 oz) vanilla pudding mix (dry)
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup whole milk
- Optional toppings: whipped cream, crushed vanilla wafers, sliced bananas, powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a bundt pan thoroughly.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and the mashed bananas until well blended.
- Whisk together the dry ingredients in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, alternating with sour cream and milk, mixing until just combined.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve warm or at room temperature, topped with optional toppings.
Notes
For best results, use room temperature ingredients and don’t overmix the batter.
