- 3 to 4 lbs beef chuck roast (cut into 3 or 4 large chunks)
- 2 tbsp olive oil
- 1 cup beef broth
- 1/3 cup BBQ sauce (or your favorite savory marinade)
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Salt and freshly cracked black pepper
Instructions
- Season and sear: Generously season all sides of your beef chunks with salt, pepper, smoked paprika, garlic powder, and onion powder. Heat olive oil in a large skillet over high heat and sear the beef pieces for 3-4 minutes per side until a rich, dark crust forms.
- Load the slow cooker: Place the seared beef into your slow cooker.
- Whisk the sauce: In a bowl, whisk together the beef broth, BBQ sauce, soy sauce, Worcestershire sauce, and brown sugar until smooth. Pour this mixture over the beef in the slow cooker.
- Slow cook: Cover and cook on Low for 8 to 9 hours or on High for 5 to 6 hours.
- Shred: Transfer the beef chunks to a large baking sheet lined with aluminum foil. Use two forks to shred the meat into strands.
- Caramelize: Ladle about 1/2 cup of the leftover juices from the slow cooker over the shredded beef. Broil for 4-5 minutes until crispy.
- Serve: Toss the beef in its juices and serve hot.
