  • 3 to 4 lbs beef chuck roast (cut into 3 or 4 large chunks)
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1/3 cup BBQ sauce (or your favorite savory marinade)
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt and freshly cracked black pepper

Instructions

  1. Season and sear: Generously season all sides of your beef chunks with salt, pepper, smoked paprika, garlic powder, and onion powder. Heat olive oil in a large skillet over high heat and sear the beef pieces for 3-4 minutes per side until a rich, dark crust forms.
  2. Load the slow cooker: Place the seared beef into your slow cooker.
  3. Whisk the sauce: In a bowl, whisk together the beef broth, BBQ sauce, soy sauce, Worcestershire sauce, and brown sugar until smooth. Pour this mixture over the beef in the slow cooker.
  4. Slow cook: Cover and cook on Low for 8 to 9 hours or on High for 5 to 6 hours.
  5. Shred: Transfer the beef chunks to a large baking sheet lined with aluminum foil. Use two forks to shred the meat into strands.
  6. Caramelize: Ladle about 1/2 cup of the leftover juices from the slow cooker over the shredded beef. Broil for 4-5 minutes until crispy.
  7. Serve: Toss the beef in its juices and serve hot.
