Description

This delightful cheesecake combines the bright flavors of lemon with a creamy texture, transporting you to cherished moments and family gatherings.


Ingredients

  • 1 (3 ounce) box of instant lemon Jello mix
  • 1 cup boiling water
  • 3 cups crushed graham crackers
  • 1 stick unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 5 tablespoons lemon juice
  • 1 cup granulated sugar
  • 1 can evaporated milk or 1 ½ cups heavy whipping cream

Instructions

  1. Boil 1 cup of water. Mix in the lemon Jell-O and stir until dissolved. Cool in the fridge for about 30 minutes.
  2. Combine melted butter with ¾ cup of the crushed graham crackers until crumbly.
  3. Press the mixture into the bottom of a 9×13 baking dish to form a solid base.
  4. Beat the evaporated milk (or heavy cream) with a handheld mixer until fluffy.
  5. Blend the softened cream cheese, lemon juice, and sugar in another bowl until smooth.
  6. Gradually add the thickened Jell-O mix to the cream cheese mixture and stir gently.
  7. Fold the whipped milk mixture into the Jell-O and cream cheese bowl.
  8. Pour the filling over the crust, smoothing it out evenly. Garnish with remaining graham cracker crumbs.
  9. Refrigerate for at least 2 hours to set.
