- 1 (3 ounce) box of instant lemon Jello mix
- 1 cup boiling water
- 3 cups crushed graham crackers
- 1 stick unsalted butter, melted
- 8 ounces cream cheese, softened
- 5 tablespoons lemon juice
- 1 cup granulated sugar
- 1 can evaporated milk or 1 ½ cups heavy whipping cream
Instructions
- Boil 1 cup of water. Mix in the lemon Jell-O and stir until dissolved. Cool in the fridge for about 30 minutes.
- Combine melted butter with ¾ cup of the crushed graham crackers until crumbly.
- Press the mixture into the bottom of a 9×13 baking dish to form a solid base.
- Beat the evaporated milk (or heavy cream) with a handheld mixer until fluffy.
- Blend the softened cream cheese, lemon juice, and sugar in another bowl until smooth.
- Gradually add the thickened Jell-O mix to the cream cheese mixture and stir gently.
- Fold the whipped milk mixture into the Jell-O and cream cheese bowl.
- Pour the filling over the crust, smoothing it out evenly. Garnish with remaining graham cracker crumbs.
- Refrigerate for at least 2 hours to set.
