Description

A delightful and comforting Tex-Mex Chicken Casserole packed with layers of rice, chicken, vegetables, and spices, perfect for any gathering.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup uncooked long grain rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes with green chilies
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Fresh cilantro and diced tomatoes for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your 9×13-inch baking dish.
  2. Combine the uncooked rice, chicken broth, taco seasoning, garlic powder, cumin, salsa, diced tomatoes, diced onion, black beans, corn, and shredded chicken in the baking dish.
  3. Cover the dish tightly with foil.
  4. Bake for 50 to 55 minutes, until the rice is tender and liquid is absorbed.
  5. Remove the foil and stir gently.
  6. Sprinkle the shredded cheese over the top.
  7. Return to the oven uncovered for an additional 10 minutes.
  8. Garnish with fresh cilantro and diced tomatoes before serving.

Notes

Make-ahead tips: Prepare the casserole a day in advance and refrigerate. Add extra baking time if baking from cold.
