- 2 cups cooked shredded chicken
- 1 cup uncooked long grain rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 can diced tomatoes with green chilies
- 1 small onion, diced
- 2 cups chicken broth
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded Mexican cheese blend
- 1 tsp garlic powder
- 1 tsp cumin
- Fresh cilantro and diced tomatoes for garnish
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease your 9×13-inch baking dish.
- Combine the uncooked rice, chicken broth, taco seasoning, garlic powder, cumin, salsa, diced tomatoes, diced onion, black beans, corn, and shredded chicken in the baking dish.
- Cover the dish tightly with foil.
- Bake for 50 to 55 minutes, until the rice is tender and liquid is absorbed.
- Remove the foil and stir gently.
- Sprinkle the shredded cheese over the top.
- Return to the oven uncovered for an additional 10 minutes.
- Garnish with fresh cilantro and diced tomatoes before serving.
Notes
Make-ahead tips: Prepare the casserole a day in advance and refrigerate. Add extra baking time if baking from cold.
