- 2 cups fresh garlic cloves, peeled
- 1 cup white vinegar
- ¾ cup water
- ¼ cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tbsp pickling salt or kosher salt
- 1 tbsp sugar
- 1 tsp coarse black pepper
- ½ tsp mustard seeds
- ½ tsp red pepper flakes
- 1 bay leaf
- 1 tbsp fresh lemon slices
Instructions
- Peel the garlic cloves and place them into a clean glass jar along with the lemon zest, black pepper, mustard seeds, red pepper flakes, bay leaf, and lemon slices.
- In a saucepan, combine the vinegar, water, lemon juice, salt, and sugar. Heat over medium heat, stirring until the salt and sugar fully dissolve.
- Pour the warm pickling liquid over the garlic, making sure it’s completely submerged.
- Let the jar cool to room temperature, then seal tightly and refrigerate.
- Pickle for at least 3 days, or ideally 5–7 days, for the brightest flavor.
- Serve chilled or chop into salads, pasta, grain bowls, or sandwiches.
