Ingredients
Here’s everything you’ll need to make this sweet, spicy, and tangy pickled cauliflower.
- 4 cups cauliflower florets, cut into bite-size pieces — The star of the recipe. Fresh, firm cauliflower provides the crisp texture and absorbs the flavorful brine beautifully.
- 1 cup white vinegar — Creates the sharp, tangy foundation of the pickling brine.
- 1 cup water — Dilutes the vinegar to create a balanced brine.
- 2 tbsp sugar — Adds just enough sweetness to balance the acidity and chili heat.
- 1 tbsp kosher salt or pickling salt — Seasons the cauliflower and enhances the flavors throughout the brine.
- 1 small jalapeño, thinly sliced — Provides fresh chili flavor and a pleasant spicy kick.
- 1 tsp red pepper flakes — Adds another layer of heat throughout the jar.
- 1 tsp black peppercorns — Contributes subtle warmth and classic pickling-spice flavor.
- 1 tsp mustard seeds — Adds a slightly sharp, earthy flavor that pairs particularly well with pickled vegetables.
- 3 garlic cloves, thinly sliced — Infuses the brine with savory garlic flavor.
- ½ tsp turmeric — Adds warm earthy notes and gives the cauliflower its beautiful golden color.
- 2 tbsp fresh dill, chopped — Adds a fresh herbal flavor that complements the vinegar and spices.
Instructions
This refrigerator pickle requires only about 20 minutes of preparation before the refrigerator takes over.
Step 1: Prepare the Cauliflower
Wash the cauliflower thoroughly and cut it into small, evenly sized, bite-size florets.
Keeping the florets approximately the same size helps them pickle more evenly.
Step 2: Pack the Jar
Place the cauliflower florets into a clean glass jar.
Add the sliced garlic, jalapeño, red pepper flakes, black peppercorns, mustard seeds, turmeric, and fresh dill.
Distribute the seasonings throughout the jar so their flavors can infuse the cauliflower evenly.
Step 3: Prepare the Sweet Pickling Brine
In a small saucepan, combine the white vinegar, water, sugar, and salt.
Heat the mixture over medium heat, stirring until the sugar and salt have completely dissolved.
Step 4: Add the Brine
Carefully pour the warm pickling brine over the cauliflower and seasonings.
Make sure all the cauliflower is completely covered by the liquid.
Step 5: Cool and Refrigerate
Allow the jar to cool to room temperature.
Once cooled, seal the jar tightly and transfer it to the refrigerator.
Step 6: Let the Cauliflower Pickle
Allow the cauliflower to pickle for at least 2–3 days before serving.
For the best balance of sweet, spicy, tangy, and seasoned flavor, let it sit for 5–7 days.
