Instructions
Thinly slice the Napa cabbage and red cabbage, then place them in a large mixing bowl. For the crispest slaw, make sure the cabbage is thoroughly washed and dried before dressing.
Add the shredded carrot, sliced red bell pepper, and green onions to the bowl. Toss everything together gently until the vegetables are evenly distributed.
Add the rice vinegar, gochujang, honey, soy sauce, sesame oil, neutral oil, garlic, ginger, salt, black pepper, and gochugaru if using to a small bowl. Whisk thoroughly until the gochujang dissolves and the dressing becomes smooth. Taste and adjust the balance, adding a little more honey for sweetness, vinegar for tang, or gochujang for additional heat.
Pour the dressing over the cabbage and vegetables. Toss thoroughly until every strand is evenly coated, taking your time mixing so the spicy dressing reaches all the vegetables.
Sprinkle the toasted sesame seeds over the slaw and toss once more to distribute them throughout. Toasting the sesame seeds first brings out a deeper, nuttier flavor.
Cover the bowl and refrigerate for approximately 15β30 minutes. This brief resting period allows the vinegar, gochujang, ginger, and garlic to penetrate the cabbage while keeping the vegetables pleasantly crisp. For a more marinated flavor, let it rest for up to several hours.
Before serving, toss the slaw thoroughly. Taste once more and adjust the seasoning if needed. If the cabbage has released extra liquid, simply toss well and serve.
Transfer the slaw to a serving bowl. Top with additional toasted sesame seeds and sliced green onions. For extra heat, add thinly sliced jalapeΓ±o or a sprinkle of gochugaru.
Serve chilled or slightly cool. The slaw is delicious immediately after marinating and becomes more flavorful as it rests. Quick Korean-style slaws are generally intended to be eaten fresh rather than fermented like traditional kimchi.
