An easy-to-make cake infused with the bright sweetness of golden pineapple juice, boasting a soft, moist texture and topped with a creamy vanilla glaze.

- 2 cups all-purpose flour (250g)
- 1 1/2 cups granulated sugar (300g)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 large eggs
- 1 cup pineapple juice (240ml)
- 3/4 cup vegetable oil (180ml)
- 1 tsp vanilla extract
- 1 cup powdered sugar (120g)
- 3–4 tbsp pineapple juice for glaze
- 1/2 tsp vanilla extract for glaze
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a bundt pan by generously greasing and flouring it.
- Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Add the eggs, pineapple juice, vegetable oil, and vanilla extract; mix until smooth and silky.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 40–45 minutes until a toothpick comes out clean.
- Cool the cake in the pan for 10–15 minutes before inverting onto a cooling rack.
- Prepare the glaze by whisking powdered sugar, pineapple juice, and vanilla extract until pourable.
- Drizzle the glaze over the warm cake before serving.
- Slice and serve immediately or store for later enjoyment.
Notes
Cake can be made a day in advance for deeper flavors. For a different texture, consider adding crushed pineapple or coconut.
