Description

An easy-to-make cake infused with the bright sweetness of golden pineapple juice, boasting a soft, moist texture and topped with a creamy vanilla glaze.


Ingredients

  • 2 cups all-purpose flour (250g)
  • 1 1/2 cups granulated sugar (300g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup pineapple juice (240ml)
  • 3/4 cup vegetable oil (180ml)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (120g)
  • 34 tbsp pineapple juice for glaze
  • 1/2 tsp vanilla extract for glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a bundt pan by generously greasing and flouring it.
  3. Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  4. Add the eggs, pineapple juice, vegetable oil, and vanilla extract; mix until smooth and silky.
  5. Pour the batter into the prepared bundt pan and smooth the top.
  6. Bake for 40–45 minutes until a toothpick comes out clean.
  7. Cool the cake in the pan for 10–15 minutes before inverting onto a cooling rack.
  8. Prepare the glaze by whisking powdered sugar, pineapple juice, and vanilla extract until pourable.
  9. Drizzle the glaze over the warm cake before serving.
  10. Slice and serve immediately or store for later enjoyment.

Notes

Cake can be made a day in advance for deeper flavors. For a different texture, consider adding crushed pineapple or coconut.
