Description

Ingredients

  • 3 eggs
  • 200 g sugar (1 cup)
  • 120 ml oil (1/2 cup)
  • 200 ml fresh orange juice (about 1 cup)
  • Zest of 1 orange
  • 240 g all-purpose flour (2 cups)
  • 2 tsp baking powder
  • 1 pinch salt

Instructions

  1. Beat the eggs with sugar until light and fluffy.
  2. Add the oil gradually while continuing to beat the mixture.
  3. Mix in the orange juice and zest until incorporated.
  4. Combine dry ingredients in another bowl and whisk together.
  5. Fold the dry ingredients into the wet mixture using a rubber spatula.
  6. Prepare the pan by pouring the batter into a greased and floured cake pan.
  7. Bake in preheated oven at 180°C (350°F) for 35-40 minutes.
  8. Add a brush of orange juice and sugar for shine.
