  • 8 oz sugar-free whipped topping, thawed
  • 23 cups fresh peaches, sliced (or canned peaches in juice, drained)

Instructions

  1. Start by mixing the graham cracker crumbs, melted butter, and granulated sugar-free sweetener in a bowl until the mixture becomes evenly moistened.
  2. Press this crumbly mixture firmly into the bottom of an 8×8-inch dish or a 9-inch pie dish to form your crust.
  3. Place the crust in the refrigerator while you prepare the filling.
  4. In a large bowl, beat the softened cream cheese until smooth.
  5. Add in the sugar-free vanilla pudding mix, cold milk, and vanilla extract; continue beating until thick and creamy.
  6. Carefully fold in the sugar-free whipped topping, mixing until fluffy.
  7. Spread half the creamy filling over the chilled crust.
  8. Layer sliced peaches on top of the filling.
  9. Gently spread the remaining filling over the peaches.
  10. Cover the pie and refrigerate for at least 4 hours (preferably overnight).
