- 8 oz sugar-free whipped topping, thawed
- 2–3 cups fresh peaches, sliced (or canned peaches in juice, drained)
Instructions
- Start by mixing the graham cracker crumbs, melted butter, and granulated sugar-free sweetener in a bowl until the mixture becomes evenly moistened.
- Press this crumbly mixture firmly into the bottom of an 8×8-inch dish or a 9-inch pie dish to form your crust.
- Place the crust in the refrigerator while you prepare the filling.
- In a large bowl, beat the softened cream cheese until smooth.
- Add in the sugar-free vanilla pudding mix, cold milk, and vanilla extract; continue beating until thick and creamy.
- Carefully fold in the sugar-free whipped topping, mixing until fluffy.
- Spread half the creamy filling over the chilled crust.
- Layer sliced peaches on top of the filling.
- Gently spread the remaining filling over the peaches.
- Cover the pie and refrigerate for at least 4 hours (preferably overnight).
- When ready, slice and serve chilled.
Notes
This pie can be made a day in advance for the best flavor. Use fresh peaches for optimal taste, and drain canned peaches well to avoid excess moisture.
