- 3 large eggs, room temperature
- 1 cup unsweetened almond milk (or water)
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 tbsp fresh orange zest

- 1 box (3 oz) sugar-free orange Jello
- 1 1/4 cups boiling water
- 1/4 cup fresh orange juice
- 8 oz cream cheese, softened
- 1/2 cup powdered monk fruit sweetener (or Swerve confectioners)
- 1 tsp vanilla extract
- 1 tbsp fresh orange zest
- 2 tbsp fresh orange juice
- 1 cup heavy whipping cream, whipped to stiff peaks
- Fresh orange slices (for garnish)
- Mini sugar-free marshmallows (for garnish)
- Sugar-free orange candy pieces (for garnish)
- Mint leaves (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with a neutral oil or cooking spray for easy removal.
- Combine the sugar-free cake mix, eggs, almond milk, vegetable oil, orange zest, and vanilla extract in a large bowl. Blend until smooth using a whisk or electric mixer.
- Pour the batter into the prepared pan.
- Bake for 28-30 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
- Prepare the orange Jello by whisking it with boiling water until dissolved, then stir in the fresh orange juice.
- Poke holes in the warm cake with a skewer and pour the Jello mixture evenly over the surface. Chill for at least 3 hours.
- Beat the cream cheese and monk fruit sweetener until creamy. Mix in the vanilla, orange zest, and orange juice.
- Whip the heavy cream to stiff peaks and fold it into the cream cheese mixture.
- Spread the frosting over the chilled cake and garnish with orange slices, mini marshmallows, orange candy, and mint leaves.
- Refrigerate for another 30 minutes before serving. Slice into squares and enjoy!
