Ingredients

  • 1 box (15.25 oz) sugar-free yellow cake mix
  • 3 large eggs, room temperature
  • 1 cup unsweetened almond milk (or water)
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 tbsp fresh orange zest
  • 1 tsp vanilla extract
  • 1 box (3 oz) sugar-free orange Jello
  • 1 1/4 cups boiling water
  • 1/4 cup fresh orange juice
  • 8 oz cream cheese, softened
  • 1/2 cup powdered monk fruit sweetener (or Swerve confectioners)
  • 1 tsp vanilla extract
  • 1 tbsp fresh orange zest
  • 2 tbsp fresh orange juice
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • Fresh orange slices (for garnish)
  • Mini sugar-free marshmallows (for garnish)
  • Sugar-free orange candy pieces (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with a neutral oil or cooking spray for easy removal.
  2. Combine the sugar-free cake mix, eggs, almond milk, vegetable oil, orange zest, and vanilla extract in a large bowl. Blend until smooth using a whisk or electric mixer.
  3. Pour the batter into the prepared pan.
  4. Bake for 28-30 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
  5. Prepare the orange Jello by whisking it with boiling water until dissolved, then stir in the fresh orange juice.
  6. Poke holes in the warm cake with a skewer and pour the Jello mixture evenly over the surface. Chill for at least 3 hours.
  7. Beat the cream cheese and monk fruit sweetener until creamy. Mix in the vanilla, orange zest, and orange juice.
  8. Whip the heavy cream to stiff peaks and fold it into the cream cheese mixture.
  9. Spread the frosting over the chilled cake and garnish with orange slices, mini marshmallows, orange candy, and mint leaves.
  10. Refrigerate for another 30 minutes before serving. Slice into squares and enjoy!

Notes
