  • 1 teaspoon lemon zest
  • 1 (8-ounce) tub sugar-free whipped topping, thawed
  • 1 (21-ounce) can sugar-free blueberry pie filling
  • 1 1/2 cups sugar-free whipped topping (for topping)
  • Optional: Extra lemon zest or fresh blueberries for garnish

Instructions

  1. Make the crust: In a medium bowl, mix graham cracker crumbs, melted butter, and sugar-free sweetener until fully combined. Press the mixture firmly into the bottom of a 9×13-inch dish. Chill in the refrigerator while preparing the filling to ensure it sets nicely.
  2. Make the lemon cheesecake layer: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar-free sweetened condensed milk, lemon juice, and lemon zest. Continue mixing until the mixture thickens and becomes velvety. Gently fold in the sugar-free whipped topping until it’s light and fluffy, then spread evenly over the chilled crust.
  3. Add the blueberry layer: Using a spoon, dollop the sugar-free blueberry pie filling over the lemon cheesecake layer. Carefully spread it to cover the surface completely.
  4. Top with whipped topping: Generously spread the remaining sugar-free whipped topping over the blueberry layer to create a lovely finish. Sprinkle extra lemon zest or toss on fresh blueberries if desired.
  5. Chill & serve: Cover the dessert with plastic wrap and refrigerate for at least 4 hours or ideally overnight. Slice and serve chilled.
