Ingredients

  • 1/4 cup powdered monk fruit sweetener
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened to room temperature
  • 1 cup powdered monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 1/2 cups sugar-free marshmallow fluff
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup sugar-free marshmallow fluff (for topping)
  • 1 cup heavy whipping cream (for topping)
  • Mini sugar-free marshmallows (optional garnish)
  • Crushed sugar-free graham crackers (optional garnish)
  • Sugar-free chocolate shavings (optional garnish)

Instructions

  1. Combine the sugar-free graham cracker crumbs, powdered monk fruit sweetener, and melted butter in a medium bowl. Press into the bottom of a 9-inch springform pan and chill for 15-20 minutes.
  2. Beat the softened cream cheese and 1 cup powdered monk fruit sweetener in a large bowl until creamy; add the vanilla and 1 1/2 cups sugar-free marshmallow fluff, then mix until blended.
  3. Whip 1 cup heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until combined.
  4. Pour the cheesecake filling over the chilled crust and refrigerate for at least 4 hours or overnight until set.
  5. Combine 1 cup sugar-free marshmallow fluff with 1 cup heavy whipping cream in a bowl, whip until light and fluffy.
  6. Spread the marshmallow topping over the set cheesecake, chill for another 1-2 hours.
  7. Garnish with mini sugar-free marshmallows or crushed graham crackers if desired, remove the springform sides, slice, and serve chilled.

Notes
