Instructions
- Combine the sugar-free graham cracker crumbs, powdered monk fruit sweetener, and melted butter in a medium bowl. Press into the bottom of a 9-inch springform pan and chill for 15-20 minutes.
- Beat the softened cream cheese and 1 cup powdered monk fruit sweetener in a large bowl until creamy; add the vanilla and 1 1/2 cups sugar-free marshmallow fluff, then mix until blended.
- Whip 1 cup heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until combined.
- Pour the cheesecake filling over the chilled crust and refrigerate for at least 4 hours or overnight until set.
- Combine 1 cup sugar-free marshmallow fluff with 1 cup heavy whipping cream in a bowl, whip until light and fluffy.
- Spread the marshmallow topping over the set cheesecake, chill for another 1-2 hours.
- Garnish with mini sugar-free marshmallows or crushed graham crackers if desired, remove the springform sides, slice, and serve chilled.
