- 1 tbsp powdered sugar-free sweetener
- 3/4 cup powdered sugar-free sweetener (for curd)
- 2 to 3 tbsp fresh lemon juice (for glaze)
- 1 tsp sugar-free maple syrup (for glaze)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C).
- Prepare the Egg Mixture: Beat the eggs with the granulated sugar-free sweetener until pale and thick. Fold in the vanilla extract and maple syrup.
- Combine Dry Ingredients: Sift flour, baking powder, and salt into a bowl. Gently fold into the egg mixture along with the lemon zest.
- Bake the Cake: Spread the batter evenly in a lined baking sheet. Bake for 10-12 minutes until golden.
- Roll the Cake: Turn the baked cake onto a clean towel dusted with sweetener and roll while warm. Let cool completely.
- Make the Lemon Curd: Whisk lemon juice, zest, sugar-free sweetener, and egg yolks in a saucepan over medium-low heat until thickened. Mix in butter and cool.
- Whip the Cream: Beat heavy cream with powdered sweetener to soft peaks.
- Assemble the Roll: Unroll the cooled cake, spread lemon curd and whipped cream, then roll back into shape.
- Glaze it Up: Combine glaze ingredients and pour over the roll. Chill for 30 minutes.
