  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest (for cream filling)
  • 1/3 cup granulated sugar-free sweetener (for filling)
  • 3 egg yolks
  • 4 tbsp unsalted butter
  • 1 cup heavy whipping cream
  • 1 tbsp powdered sugar-free sweetener
  • 3/4 cup powdered sugar-free sweetener (for curd)
  • 2 to 3 tbsp fresh lemon juice (for glaze)
  • 1 tsp sugar-free maple syrup (for glaze)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare the Egg Mixture: Beat the eggs with the granulated sugar-free sweetener until pale and thick. Fold in the vanilla extract and maple syrup.
  3. Combine Dry Ingredients: Sift flour, baking powder, and salt into a bowl. Gently fold into the egg mixture along with the lemon zest.
  4. Bake the Cake: Spread the batter evenly in a lined baking sheet. Bake for 10-12 minutes until golden.
  5. Roll the Cake: Turn the baked cake onto a clean towel dusted with sweetener and roll while warm. Let cool completely.
  6. Make the Lemon Curd: Whisk lemon juice, zest, sugar-free sweetener, and egg yolks in a saucepan over medium-low heat until thickened. Mix in butter and cool.
  7. Whip the Cream: Beat heavy cream with powdered sweetener to soft peaks.
  8. Assemble the Roll: Unroll the cooled cake, spread lemon curd and whipped cream, then roll back into shape.
  9. Glaze it Up: Combine glaze ingredients and pour over the roll. Chill for 30 minutes.
