- 2 tsp vanilla extract (for filling)
- 1 egg, beaten
- 1 cup water
- 2 tbsp butter (for filling)
- 1 cup almond flour (for crumb topping)
- 1/2 cup granulated monk fruit sweetener (for crumb topping)
- 1/4 tsp cream of tartar
- 1/4 tsp baking soda
- Pinch of salt
- 1/4 cup unsalted butter, softened (for crumb topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the crust by mixing almond flour, monk fruit sweetener, melted butter, salt, and vanilla extract until it resembles wet sand. Press firmly into a 9-inch pie plate and bake for 8-10 minutes until golden brown. Allow to cool completely.
- Make the filling by whisking together monk fruit sweetener, flour, vanilla extract, beaten egg, water, and butter in a saucepan. Bring to a boil over medium heat, whisking constantly, then let cool completely.
- Create the crumb topping by combining almond flour, monk fruit sweetener, cream of tartar, baking soda, and salt in a bowl. Cut in softened butter until crumbly.
- Combine the cooled filling with the prepared crust and top with the crumb mixture. Bake at 350°F (175°C) for 40-45 minutes until set and golden.
- Cool the pie for at least 2 hours, then refrigerate for 1 hour before serving.
Notes
Great make-ahead dessert that can be made a day in advance. Experiment with different flavors by adding almond extract or sugar-free chocolate chips.
