- 3 cups all-purpose flour
- 1 1/2 cups milk
- 1 cup granulated sugar-free sweetener
- 2 large room-temperature eggs
- 4 tsp baking powder
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup melted butter
- 1 cup softened butter
- 1 cup sugar-free brown sweetener
- 2 tbsp flour
- 1 tbsp ground cinnamon
- 2 cups powdered sugar-free sweetener
- 5 tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan.
- In a large mixing bowl, whisk together the flour, sugar-free sweetener, baking powder, and salt until well combined.
- Add the milk, eggs, vanilla extract, and melted butter. Stir until smooth.
- Pour the batter into the prepared pan and use a spatula to smooth the top evenly.
- In a separate bowl, beat together the softened butter, sugar-free brown sweetener, flour, and cinnamon until smooth.
- Drop spoonfuls of the cinnamon mixture over the batter.
- Using a knife, gently swirl the cinnamon mixture through the batter.
- Bake for 25–30 minutes until golden, and a toothpick comes out with a few moist crumbs.
- Let the cake cool slightly in the pan.
- Whisk together powdered sugar-free sweetener, milk, and vanilla in a bowl until smooth.
- Drizzle the glaze over the warm cake.
- Serve warm or at room temperature, cutting into squares.
Notes
Make the batter a day ahead for enhanced flavor. Store covered in an airtight container for up to one week.
