Description

A guilt-free yet indulgent cake that combines the flavors of cinnamon rolls in a moist and fluffy cake.


Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 cups milk
  • 1 cup granulated sugar-free sweetener
  • 2 large room-temperature eggs
  • 4 tsp baking powder
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup melted butter
  • 1 cup softened butter
  • 1 cup sugar-free brown sweetener
  • 2 tbsp flour
  • 1 tbsp ground cinnamon
  • 2 cups powdered sugar-free sweetener
  • 5 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan.
  3. In a large mixing bowl, whisk together the flour, sugar-free sweetener, baking powder, and salt until well combined.
  4. Add the milk, eggs, vanilla extract, and melted butter. Stir until smooth.
  5. Pour the batter into the prepared pan and use a spatula to smooth the top evenly.
  6. In a separate bowl, beat together the softened butter, sugar-free brown sweetener, flour, and cinnamon until smooth.
  7. Drop spoonfuls of the cinnamon mixture over the batter.
  8. Using a knife, gently swirl the cinnamon mixture through the batter.
  9. Bake for 25–30 minutes until golden, and a toothpick comes out with a few moist crumbs.
  10. Let the cake cool slightly in the pan.
  11. Whisk together powdered sugar-free sweetener, milk, and vanilla in a bowl until smooth.
  12. Drizzle the glaze over the warm cake.
  13. Serve warm or at room temperature, cutting into squares.

Notes

Make the batter a day ahead for enhanced flavor. Store covered in an airtight container for up to one week.
