  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup chopped walnuts

  • 1/4 cup chopped pecans or almonds (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Blend the wet ingredients in a blender or food processor until smooth.
  2. Combine the blended mixture with almond flour, baking powder, and salt in a mixing bowl.
  3. Add the chopped walnuts, folding gently to distribute.
  4. Fill the muffin tin with the batter, about two-thirds full.
  5. Bake in a preheated oven at 350°F (175°C) for 18–20 minutes.
  6. Cool the muffins in the tin for a few minutes before transferring to a wire rack.
