A delightful pound cake infused with the flavor of fresh strawberries, perfect for any occasion.

- 1 cup (225 g) unsalted butter, softened
- 1 3/4 cups (350 g) sugar
- 4 large eggs (room temperature)
- 2 1/2 cups (315 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (120 ml) milk
- 1/2 cup (120 ml) strawberry puree
- 1 tbsp strawberry gelatin powder (optional)
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2–3 tbsp strawberry puree or milk (for glaze)
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Cream the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs, one at a time, and add the vanilla extract.
- Combine the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk and strawberry puree.
- Add the strawberry gelatin powder if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Whisk together powdered sugar, strawberry puree or milk, and vanilla extract for the glaze.
- Drizzle the glaze over the cooled cake and allow it to set before slicing.
Notes
Store wrapped in plastic wrap to retain moisture. Can also be served with ice cream or whipped cream.
