- 3 (8 oz) blocks cream cheese (softened)
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups strawberries (fresh or frozen)
- 1/4 cup sugar (for strawberries)
- 1 tbsp lemon juice
- 1 1/2 cups crushed vanilla cookies (like Golden Oreos)
- 1/2 cup crushed freeze-dried strawberries or strawberry cookies
- 4 tbsp melted butter (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by mixing crushed graham crackers, melted butter, and sugar.
- Press the mixture firmly into the bottom of a springform pan.
- Make the filling by beating cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Gently stir in sour cream and vanilla extract.
- Pour the filling over the prepared crust and bake for 50-60 minutes.
- Turn off the oven and leave the cheesecake inside for one hour.
- Prepare the strawberry layer by cooking strawberries, sugar, and lemon juice in a saucepan until thickened.
- Let the strawberry mixture cool to room temperature.
- Create the crunch topping by mixing crushed vanilla cookies, crushed freeze-dried strawberries, and melted butter.
- Assemble the cheesecake with the strawberry layer and crunch topping.
- Chill before serving for at least 4 hours.
Notes
For an even richer flavor, prepare the cheesecake a day before serving. Fresh strawberries provide better taste and presentation, but frozen can be used in a pinch.
