Ingredients

  • 1/2 cup melted butter
  • 2 tbsp sugar
  • 3 (8 oz) blocks cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups strawberries (fresh or frozen)
  • 1/4 cup sugar (for strawberries)
  • 1 tbsp lemon juice
  • 1 1/2 cups crushed vanilla cookies (like Golden Oreos)
  • 1/2 cup crushed freeze-dried strawberries or strawberry cookies
  • 4 tbsp melted butter (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the crust by mixing crushed graham crackers, melted butter, and sugar.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Make the filling by beating cream cheese and granulated sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Gently stir in sour cream and vanilla extract.
  7. Pour the filling over the prepared crust and bake for 50-60 minutes.
  8. Turn off the oven and leave the cheesecake inside for one hour.
  9. Prepare the strawberry layer by cooking strawberries, sugar, and lemon juice in a saucepan until thickened.
  10. Let the strawberry mixture cool to room temperature.
  11. Create the crunch topping by mixing crushed vanilla cookies, crushed freeze-dried strawberries, and melted butter.
  12. Assemble the cheesecake with the strawberry layer and crunch topping.
  13. Chill before serving for at least 4 hours.

Notes

For an even richer flavor, prepare the cheesecake a day before serving. Fresh strawberries provide better taste and presentation, but frozen can be used in a pinch.
