Ingredients
Here’s a breakdown of what goes into this crisp, spicy pickled cauliflower recipe and why each ingredient plays a role.
- 1½ lbs cauliflower, cut into bite-sized florets — The star of the recipe, providing a hearty, crunchy base that soaks up the bold Sriracha brine.
- 2 cups white vinegar — Forms the tangy, acidic base of the brine.
- 2 cups water — Balances the acidity of the vinegar so the brine isn’t overwhelming.
- 2 tbsp pickling salt or kosher salt — Enhances the overall flavor of the brine and helps preserve the cauliflower.
- 1 tbsp sugar — Balances the acidity and heat with a touch of sweetness.
- ¼ cup Sriracha sauce — The star ingredient, infusing the brine with that beloved garlicky, tangy, spicy flavor.
- 5 cloves garlic, thinly sliced — Infuses the brine with bold, aromatic garlic flavor.
- 2 jalapeños, thinly sliced — Brings fresh, bright heat throughout the jar.
- 1 serrano pepper, thinly sliced (optional) — For those who want to amplify the heat even further.
- 1 tsp crushed red pepper flakes — Reinforces the heat throughout the brine.
- 1 tsp whole black peppercorns — Adds a mild, warm heat and subtle spice.
- 1 tsp mustard seeds — Provides a slightly tangy, sharp flavor typical of classic pickling spice blends.
- 1 tsp coriander seeds — Adds a warm, citrusy note to the brine.
- 1 tsp dill seeds (or 2 sprigs fresh dill) — Adds a classic, essential pickle flavor.
- ½ tsp smoked paprika — Adds a warm, smoky undertone that complements the Sriracha.
- 2 bay leaves — Adds subtle aromatic depth throughout the pickling process.
Instructions
This recipe involves a quick blanch followed by a spicy brine. Here’s exactly how to make it.
Wash the cauliflower and cut it into bite-sized florets.
Bring a pot of water to a boil and blanch the cauliflower florets for 1–2 minutes. Immediately transfer them to an ice bath to keep them crisp, then drain well.
Pack the cauliflower into a clean glass jar or airtight container.
Add the sliced garlic, jalapeños, serrano pepper, black peppercorns, mustard seeds, coriander seeds, dill seeds, crushed red pepper flakes, smoked paprika, and bay leaves throughout the jar.
In a saucepan, combine the white vinegar, water, pickling salt, sugar, and Sriracha sauce.
Heat over medium heat, stirring until the salt and sugar dissolve completely. Do not let the brine boil.
Carefully pour the warm brine over the cauliflower until it is completely submerged.
Allow the jar to cool to room temperature, then seal tightly with a lid.
Refrigerate for at least 48 hours before serving. For the boldest spicy flavor, let the cauliflower pickle for 5–7 days.
Gently shake the jar once a day to help distribute the Sriracha and seasonings evenly.
