This recipe involves an active prep stage followed by a natural fermentation period. Here’s exactly how to make it.
Remove the outer leaves from the cabbage. Quarter the cabbage, remove the core, and finely shred the leaves. Place the cabbage in a large clean bowl.
Sprinkle the salt evenly over the shredded cabbage. Using clean hands, massage and squeeze the cabbage for approximately 5–10 minutes. The cabbage will soften and release liquid, creating the natural brine needed for fermentation. Continue until the cabbage is juicy and flexible.
Add the minced garlic, lemon zest, lemon juice, sliced jalapeños, black pepper, and red pepper flakes. Add the optional mustard seeds and cumin seeds. Mix thoroughly until everything is evenly distributed.
Transfer the mixture into a clean fermentation jar. Pack the cabbage down firmly with a clean utensil or fermentation tamper. Press the cabbage beneath the liquid and remove as many air pockets as possible. Leave approximately 1–2 inches of headspace. If using a fermentation weight, place it on top to keep the cabbage submerged.
