Spicy Jalapeño Pickled Garlic

  • 2 cups fresh garlic cloves, peeled
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp pickling salt or kosher salt
  • 1 tbsp sugar
  • 2 fresh jalapeños, thinly sliced
  • 1 tsp red pepper flakes
  • 1/2 tsp black peppercorns
  • 1/2 tsp mustard seeds
  • 2 small dried chili peppers
  • 1 bay leaf
  • 1/2 tsp cumin seeds

Instructions

Step 1: Prepare the Garlic

Peel enough fresh garlic to measure approximately 2 cups of cloves.

Inspect the cloves and discard any that are soft or damaged.

Keep the cloves whole so they maintain their texture as they pickle.

Step 2: Prepare the Jalapeños

Thinly slice the two fresh jalapeños.

For a spicy batch, use the slices as prepared. Jalapeño heat can naturally vary from pepper to pepper, so the exact spice level of each batch may differ slightly.

Step 3: Fill the Jar

Place the peeled garlic cloves into a clean glass jar.

Add the sliced jalapeños, red pepper flakes, black peppercorns, mustard seeds, dried chili peppers, bay leaf, and cumin seeds.

Arrange the ingredients so the peppers and spices are distributed throughout the garlic rather than sitting entirely at the top.

Step 4: Prepare the Pickling Brine

Add the white vinegar, water, pickling or kosher salt, and sugar to a saucepan.

Place over medium heat.

Stir as the mixture warms until the salt and sugar have completely dissolved.

There is no need for prolonged cooking—the goal is simply to create a fully dissolved, evenly seasoned brine.

Step 5: Pour the Brine Over the Garlic

Carefully pour the warm pickling liquid into the jar.

Make sure the garlic cloves and jalapeño slices are completely submerged in the brine.

Step 6: Cool the Jar

Leave the jar at room temperature just until it has cooled.

Once cooled, seal it tightly with a clean lid and transfer it to the refrigerator.

This is a refrigerator pickle, so it should be kept refrigerated rather than stored at room temperature.

Step 7: Let the Garlic Pickle

Allow the garlic to pickle in the refrigerator for at least 3 days before tasting.

During this time, the garlic begins absorbing the vinegar, jalapeño, chile, and spice flavors.

Step 8: Wait Longer for Deeper Flavor

For a stronger jalapeño flavor and more developed spicy character, let the garlic pickle for approximately 5 to 7 days.

The extra time allows the flavors in the jar to mingle more thoroughly.

Step 9: Serve

Serve the garlic and jalapeños chilled.

Enjoy them whole as a spicy snack or chop them and use them as a flavorful addition to your favorite meals.
