- 8 oz cream cheese, softened
- 1/2 cup shredded sharp cheddar cheese
- 1–2 fresh jalapeños, finely minced
- 1 garlic clove, finely minced or grated
- 2 tbsp sour cream
- 1 tbsp fresh lime juice
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 2 tbsp finely chopped fresh cilantro
- 1/4 tsp salt, or to taste
- 1 tbsp finely sliced green onions, optional
For Topping
- 1 tbsp shredded cheddar
- Thinly sliced jalapeño
- Chopped cilantro
- Pinch of smoked paprika
Instructions
Step 1: Soften the Cream Cheese
Remove the cream cheese from the refrigerator and allow it to sit at room temperature for approximately 20–30 minutes.
It should become soft enough to stir easily but shouldn’t be melted.
Properly softened cream cheese gives you a smoother spread.
Step 2: Prepare the Jalapeños
Wash and dry the jalapeños.
Remove the stems.
For a milder spread, slice the peppers open and remove most or all of the seeds and pale interior membranes.
For additional heat, leave some of them intact.
Finely mince the jalapeño.
Small pieces distribute more evenly throughout the cream cheese and prevent individual bites from containing an unexpectedly large piece of pepper.
Wash your hands thoroughly after handling fresh jalapeños and avoid touching your eyes.
Step 3: Make the Creamy Base
Add the softened cream cheese and 2 tablespoons sour cream to a medium mixing bowl.
Beat or stir until completely smooth and creamy.
A sturdy spoon or silicone spatula works well.
For an especially smooth, whipped consistency, you can briefly use a hand mixer.
Step 4: Add the Jalapeño and Seasonings
Add:
- Finely minced jalapeño
- 1 minced or grated garlic clove
- 1 tablespoon fresh lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Stir until evenly distributed.
Step 5: Add the Cheddar
Fold in 1/2 cup shredded sharp cheddar cheese.
Mix gently until cheddar is distributed throughout the creamy base.
Step 6: Add the Fresh Herbs
Fold in:
- 2 tablespoons finely chopped cilantro
- 1 tablespoon sliced green onions, if using
Mix just until combined.
Step 7: Taste and Adjust
Taste a small amount.
This is your opportunity to customize the spread.
For more heat, add additional minced jalapeño.
For more tang, add a small squeeze of lime.
For more smokiness, add a pinch of smoked paprika.
For more cheese flavor, add a little additional cheddar.
Adjust the salt only after tasting.
Step 8: Chill
Cover the bowl and refrigerate for at least 30 minutes.
Although you can technically eat the spread immediately, chilling improves it considerably.
The garlic, jalapeño, lime, cilantro, cheddar, and smoked paprika have time to blend into the cream cheese base.
Step 9: Garnish
Transfer the spread to a serving bowl.
Top with:
- 1 tablespoon shredded cheddar
- Thinly sliced jalapeño
- Chopped cilantro
- A light dusting of smoked paprika
For a polished presentation, create a few swirls across the surface with the back of a spoon before adding the garnishes.
Step 10: Serve
Serve chilled or allow the spread to soften at room temperature for approximately 10 minutes before serving.
Pair with crackers, toasted bread, bagels, tortilla chips, vegetables, or your favorite savory snacks.
