- 2 cups fresh garlic cloves, peeled — The foundation of the recipe. Choose fresh, firm cloves without soft or damaged spots.
- 1 cup white vinegar — Provides the sharp acidity necessary for the refrigerator-pickled flavor.
- ½ cup water — Dilutes the vinegar while keeping the brine pleasantly tangy.
- ¼ cup honey — Balances the acidity and chile heat with floral sweetness.
- 1 tablespoon kosher salt or pickling salt — Seasons the garlic and brine.
- 1 tablespoon hot sauce — Adds chile flavor, acidity, and immediate heat.
- 1 teaspoon red pepper flakes — Distributes spicy flavor throughout the brine.
- ½ teaspoon black peppercorns — Add gentle peppery warmth.
- ½ teaspoon mustard seeds — Provide classic pickling-spice character.
- 2 small dried chili peppers — Slowly infuse additional chile flavor as the garlic rests.
- 1 bay leaf — Adds subtle herbal depth.
- ¼ teaspoon smoked paprika — Gives the sweet-spicy brine a lightly smoky finish.
Instructions
Step 1: Prepare the Garlic
Peel enough fresh garlic to measure 2 cups of cloves.
Inspect the cloves and discard any that are damaged, unusually soft, or spoiled.
Place the prepared garlic into a clean glass jar.
Don’t pack the cloves so tightly that the brine cannot circulate around them.
Step 2: Combine the Pickling Liquid
In a saucepan, combine:
- White vinegar
- Water
- Honey
- Salt
- Hot sauce
- Red pepper flakes
- Black peppercorns
- Mustard seeds
- Dried chili peppers
- Bay leaf
- Smoked paprika
Stir everything together.
Step 3: Warm the Brine
Place the saucepan over medium heat.
Warm gently while stirring until the honey and salt are completely dissolved.
There’s no need for an aggressive boil.
The goal is simply to dissolve the honey and salt while allowing the spices to begin releasing their flavors.
Step 4: Cover the Garlic
Carefully pour the warm pickling liquid over the prepared garlic.
Make sure all the cloves are covered by the brine.
Leave appropriate space at the top of the jar rather than filling it to overflowing.
Step 5: Cool
Allow the jar to cool before refrigerating.
Once cooled, close it securely with a clean lid and transfer it to the refrigerator.
Step 6: Let the Garlic Pickle
Refrigerate for at least 3 days before tasting.
For a more developed combination of sweet honey, vinegar, garlic, and chile, allow approximately 1 week before serving.
Keep the cloves submerged in the brine while they pickle.
Step 7: Serve
Remove the amount you need using a clean utensil.
Serve the pickled garlic chilled, or slice and chop the cloves before adding them to your favorite dishes.
