Spicy Feta Pepperoncini Dip

For the Dip

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 1/2 cup pepperoncini peppers, drained and chopped
  • 2 tbsp pepperoncini brine
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped

Instructions

Step 1: Prepare the Ingredients

Drain the pepperoncini, but reserve some of their brine.

Chop enough peppers to measure 1/2 cup and mince the fresh garlic.

Let the cream cheese soften before blending. Softer cream cheese combines much more easily with the feta.

Step 2: Add Everything to the Food Processor

Add the crumbled feta, softened cream cheese, chopped pepperoncini, 2 tablespoons pepperoncini brine, olive oil, minced garlic, lemon juice, oregano, garlic powder, red pepper flakes, and black pepper to a food processor.

Step 3: Blend Until Creamy

Process the mixture for approximately 1 to 2 minutes.

Stop occasionally to scrape down the sides of the food processor so all the feta and seasonings blend evenly.

Continue processing until the dip becomes creamy and mostly smooth.

A little texture is perfectly fine and can make the dip even more appealing.

Step 4: Adjust the Consistency

Check the consistency after blending.

If you prefer a slightly thinner or creamier dip, add another 1 to 2 teaspoons of pepperoncini brine.

Blend again briefly until it reaches your preferred consistency.

Add the extra liquid gradually because it’s easier to thin the dip than to make it thicker again.

Step 5: Add the Fresh Herbs

Transfer the blended feta mixture to a serving bowl.

Fold in the chopped fresh parsley and dill.

Adding the fresh herbs after blending helps preserve some of their texture and freshness.

Step 6: Taste and Adjust

Taste the dip before chilling.

Add a little more lemon juice if you want extra brightness, additional chopped pepperoncini for more tang, or another pinch of red pepper flakes for more heat.

Step 7: Chill

Cover the bowl and refrigerate the dip for at least 30 minutes.

This resting period allows the flavors of the garlic, pepperoncini, herbs, feta, and seasonings to come together.

The dip will also become slightly thicker as it chills.

Step 8: Garnish and Serve

Just before serving, drizzle a little extra-virgin olive oil over the surface.

Finish with a sprinkle of red pepper flakes and fresh herbs for an attractive presentation.

Serve chilled with your favorite dippers.
