- 2 cups mashed sweet potatoes (cooked & cooled)
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- For glaze: 1 cup powdered sugar, 2-3 tbsp milk, 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter or oil and dusting them lightly with flour.
- Combine wet ingredients: In a large bowl, mix together the mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Combine wet and dry: Gradually add the dry ingredients into the wet ingredients and stir just until combined.
- Distribute the batter evenly between the prepared cake pans, smoothing the top with a spatula.
- Bake for 25-30 minutes. Use a toothpick to check for doneness.
- Cool in the pans for around 10 minutes, then transfer to wire racks to cool completely.
- Prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
- Assemble the cake by pouring the glaze over the bottom layer, stacking the second layer on top, and drizzling more glaze on top.
- Slice, serve, and enjoy!
