- 1 cup all-purpose flour (125 g)
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs (room temperature)
- 3/4 cup sugar (150 g)
- 1 tsp vanilla extract
- 1/4 cup milk (60 ml)
- 1/4 cup oil or melted butter (60 ml)
Instructions
- Preheat your oven to 180°C (350°F). Prepare an 8-inch cake pan by greasing it and lining the bottom with parchment paper.
- Sift together the flour, baking powder, and salt into a bowl.
- Beat the eggs and sugar together in a separate bowl using your mixer for 5–7 minutes until pale, thick, and fluffy.
- Add in the vanilla extract, gently mixing until well combined.
- Fold in the dry ingredients gradually using a spatula.
- Pour in the milk and oil (or melted butter) and fold until the batter is smooth.
- Transfer the batter to your prepared cake pan, leveling it out.
- Bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, consider folding in zest or chocolate chips. Ensure eggs are at room temperature for best results.
