Description

A light and fluffy vanilla sponge cake perfect for any occasion, topped with your choice of frosting or fruits.


Ingredients

  • 1 cup all-purpose flour (125 g)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs (room temperature)
  • 3/4 cup sugar (150 g)
  • 1 tsp vanilla extract
  • 1/4 cup milk (60 ml)
  • 1/4 cup oil or melted butter (60 ml)

Instructions

  1. Preheat your oven to 180°C (350°F). Prepare an 8-inch cake pan by greasing it and lining the bottom with parchment paper.
  2. Sift together the flour, baking powder, and salt into a bowl.
  3. Beat the eggs and sugar together in a separate bowl using your mixer for 5–7 minutes until pale, thick, and fluffy.
  4. Add in the vanilla extract, gently mixing until well combined.
  5. Fold in the dry ingredients gradually using a spatula.
  6. Pour in the milk and oil (or melted butter) and fold until the batter is smooth.
  7. Transfer the batter to your prepared cake pan, leveling it out.
  8. Bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, consider folding in zest or chocolate chips. Ensure eggs are at room temperature for best results.
