- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 4 cups broccoli florets
- 1 tablespoon sesame seeds (optional)
- 2 green onions, sliced (optional)
- Cooked white or brown rice, for serving
Instructions
- Prepare the sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and brown sugar in a mixing bowl.
- Add the chicken thighs to the slow cooker and pour the sauce over, ensuring each piece is coated.
- Cook on LOW for 4-5 hours, or HIGH for 2.5-3 hours.
- Mix the cornstarch with cold water and stir into the slow cooker about 30 minutes before cooking ends.
- Steam or blanch the broccoli until just tender.
- Combine the chicken with broccoli and garnish with sesame seeds and sliced green onions before serving.
- Serve hot over rice and enjoy!
