Ingredients

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 4 cups broccoli florets
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, sliced (optional)
  • Cooked white or brown rice, for serving

Instructions

  1. Prepare the sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and brown sugar in a mixing bowl.
  2. Add the chicken thighs to the slow cooker and pour the sauce over, ensuring each piece is coated.
  3. Cook on LOW for 4-5 hours, or HIGH for 2.5-3 hours.
  4. Mix the cornstarch with cold water and stir into the slow cooker about 30 minutes before cooking ends.
  5. Steam or blanch the broccoli until just tender.
  6. Combine the chicken with broccoli and garnish with sesame seeds and sliced green onions before serving.
  7. Serve hot over rice and enjoy!
