- 3 lbs Beef Chuck Roast (cut into large chunks)
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 cup rich beef bone broth
- 1/4 cup soy sauce or Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and cracked black pepper to taste
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Start by cutting the beef into generous chunks. Pat dry and season with salt and pepper.
- If desired, sear the beef chunks in a hot skillet for 2-3 minutes per side.
- Transfer the seared beef into your slow cooker.
- Add diced onions, minced garlic, beef broth, soy sauce, tomato paste, and herbs. Stir gently to combine.
- Cover the slow cooker and set it to cook on LOW for 7 to 8 hours.
- For thicker gravy, whisk together cornstarch and water. Stir into the cooking liquid during the last 30 minutes.

Make-ahead tips: Prepare the beef and place it in the slow cooker insert the night before. Cooking alternatives: Use a Dutch oven at 325°F for 3-4 hours.
