- 3 lbs Beef Chuck Roast (cut into large chunks)
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 cup rich beef bone broth
- 1/4 cup soy sauce or Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and cracked black pepper to taste
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Cut the beef chuck into generous chunks. Pat them dry with paper towels, then season with salt and cracked black pepper.
- Sear the beef in a heavy skillet over medium-high heat for about 2-3 minutes on each side.
- Transfer seared beef to slow cooker, then add onions, garlic, broth, soy sauce, tomato paste, and herbs. Stir to combine.
- Cook on LOW for 7 to 8 hours or HIGH for 4-5 hours.
- Thicken the gravy in the last 30 minutes by whisking together cornstarch and water, then stir into the cooker.
Notes
