Description

Tender, juicy beef slowly simmered with spices and broth, perfect for tacos, rice, or sandwiches.


Ingredients

  • 3 lbs Beef Chuck Roast (cut into large chunks)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup rich beef bone broth
  • 1/4 cup soy sauce or Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and cracked black pepper to taste
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Cut the beef chuck into generous chunks. Pat them dry with paper towels, then season with salt and cracked black pepper.
  2. Sear the beef in a heavy skillet over medium-high heat for about 2-3 minutes on each side.
  3. Transfer seared beef to slow cooker, then add onions, garlic, broth, soy sauce, tomato paste, and herbs. Stir to combine.
  4. Cook on LOW for 7 to 8 hours or HIGH for 4-5 hours.
  5. Thicken the gravy in the last 30 minutes by whisking together cornstarch and water, then stir into the cooker.

Notes

For make-ahead tips, prepare ingredients the night before and refrigerate. You can also adapt this recipe for an Instant Pot or oven.
