Description
Delicious, tender beef slow-cooked with pineapple and soy sauce for a perfect sweet-savory meal.
Ingredients
Scale
- 2–3 lb beef loin, trimmed of excess fat
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- 8 cloves garlic, minced
- 1/4 cup soy sauce
- 1/2 cup brown sugar
- 1 can (23.5 ounces) pineapple chunks with juice
Instructions
- Sear the beef: Begin by heating the vegetable oil in a skillet over medium-high heat. Generously season your beef loin with salt and pepper. Sear the beef on all sides until it’s beautifully browned, about 2-3 minutes per side.
- Combine ingredients: In your slow cooker, mix the minced garlic, soy sauce, brown sugar, and pineapple chunks along with their juice.
- Add the beef: Carefully place the seared beef into the slow cooker, ensuring it’s submerged in the mixture. Cover and set to low for 8 hours.
- Slice and serve: After cooking, remove the beef and slice it. Drizzle some of the sauce over the slices to enjoy.
Notes
Searing the beef enhances flavor; be mindful of the cooking time to avoid overcooked beef.
