Slow Cooker Caramelized Onion Chicken

Description

A comforting dish featuring tender chicken and sweet caramelized onions, all cooked to perfection in a slow cooker.


Ingredients

  • 68 Chicken drumsticks (or thighs)
  • 1 tbsp Olive oil
  • 3 large Yellow onions, sliced into thick rings
  • 4 cloves Garlic, minced
  • Salt & black pepper (to taste)
  • 1/2 cup Chicken broth
  • 3 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Balsamic vinegar
  • 1 tsp Dried thyme
  • 1 tbsp Cornstarch and 2 tbsp water (for optional thickening)

Instructions

  1. Season the chicken dry with a paper towel and season with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat, then sear the chicken for about 3 minutes per side until golden-brown.
  3. Arrange the thick slices of yellow onion and minced garlic in the bottom of the slow cooker.
  4. Whisk together the chicken broth, soy sauce, brown sugar, balsamic vinegar, and dried thyme in a small bowl.
  5. Arrange the seared chicken pieces on top of the onions and pour the sauce over the chicken.
  6. Cover and cook on Low for 6-7 hours or on High for 3-4 hours until tender.
  7. Lift the chicken from the slow cooker, and if desired, mix cornstarch with water and add to the sauce to thicken.
  8. Serve the chicken with rich caramelized onions on top.

Notes

Prepare onions and season chicken the night before for convenience. Avoid overcrowding the slow cooker for best results.
