Description
A comforting dish featuring tender chicken and sweet caramelized onions, all cooked to perfection in a slow cooker.
Ingredients

- 6–8 Chicken drumsticks (or thighs)
- 1 tbsp Olive oil
- 3 large Yellow onions, sliced into thick rings
- 4 cloves Garlic, minced
- Salt & black pepper (to taste)
- 1/2 cup Chicken broth
- 3 tbsp Soy sauce
- 2 tbsp Brown sugar
- 1 tbsp Balsamic vinegar
- 1 tsp Dried thyme
- 1 tbsp Cornstarch and 2 tbsp water (for optional thickening)
Instructions
- Season the chicken dry with a paper towel and season with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat, then sear the chicken for about 3 minutes per side until golden-brown.
- Arrange the thick slices of yellow onion and minced garlic in the bottom of the slow cooker.
- Whisk together the chicken broth, soy sauce, brown sugar, balsamic vinegar, and dried thyme in a small bowl.
- Arrange the seared chicken pieces on top of the onions and pour the sauce over the chicken.
- Cover and cook on Low for 6-7 hours or on High for 3-4 hours until tender.
- Lift the chicken from the slow cooker, and if desired, mix cornstarch with water and add to the sauce to thicken.
- Serve the chicken with rich caramelized onions on top.
Notes
Prepare onions and season chicken the night before for convenience. Avoid overcrowding the slow cooker for best results.
