Ingredients

  • 34 lbs bone-in beef short ribs
  • 2 large yellow onions, sliced into rings
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup red wine (or extra beef broth)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by liberally seasoning the short ribs with salt and black pepper.
  2. In a large skillet, heat olive oil over medium-high.
  3. Sear the ribs for about 3–4 minutes per side, until a deep, golden-brown crust forms.
  4. Transfer the seared ribs into your slow cooker.
  5. Reduce the skillet heat to medium and add the sliced onions and minced garlic.
  6. Sauté for 3–5 minutes until softened and fragrant.
  7. Stir in the tomato paste to coat the onions.
  8. Pour in the red wine, scraping the bottom for browned bits.
  9. Let this mixture simmer for 2 minutes and then pour over the short ribs.
  10. Add the beef broth, Worcestershire sauce, and dried thyme.
  11. Secure the lid and set your slow cooker to Low for 7–8 hours or on High for 4–5 hours.
  12. Once the meat is tender, remove the ribs and skim any excess fat from the sauce.
  13. Ladle the onion gravy over the ribs and garnish with fresh parsley.

Notes

For enhanced flavors, prepare the dish a day in advance. Skipping the sear may result in a less complex flavor profile.
