- 2 large yellow onions, sliced into rings
- 4 cloves garlic, minced
- 2 cups beef broth
- 1/2 cup red wine (or extra beef broth)
- 2 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by liberally seasoning the short ribs with salt and black pepper.
- In a large skillet, heat olive oil over medium-high.
- Sear the ribs for about 3–4 minutes per side, until a deep, golden-brown crust forms.
- Transfer the seared ribs into your slow cooker.
- Reduce the skillet heat to medium and add the sliced onions and minced garlic.
- Sauté for 3–5 minutes until softened and fragrant.
- Stir in the tomato paste to coat the onions.
- Pour in the red wine, scraping the bottom for browned bits.
- Let this mixture simmer for 2 minutes and then pour over the short ribs.
- Add the beef broth, Worcestershire sauce, and dried thyme.
- Secure the lid and set your slow cooker to Low for 7–8 hours or on High for 4–5 hours.
- Once the meat is tender, remove the ribs and skim any excess fat from the sauce.
- Ladle the onion gravy over the ribs and garnish with fresh parsley.

For enhanced flavors, prepare the dish a day in advance. Skipping the sear may result in a less complex flavor profile.
