Ingredients

  • 1 lb chicken or turkey sausage
  • 8 large eggs
  • 1 1/3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 20 oz hash browns
  • 2 cups cheddar cheese, grated (divided)
  • 1/2 small yellow onion, diced
  • 1/2 bell pepper, diced (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the sausage in a skillet over medium heat until browned; drain excess grease.
  3. Whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder in a mixing bowl.
  4. Layer the hash browns in the greased baking dish, then add crumbled sausage, diced onion, bell peppers, and 1½ cups of cheddar cheese.
  5. Pour the egg mixture evenly over the layers.
  6. Top with the remaining ½ cup of cheddar cheese.
  7. Bake for 55-60 minutes until set and golden.
  8. Rest for 5 minutes before slicing and serving.

Notes

Assemble the casserole a day in advance and refrigerate. Bake for about 10 extra minutes when ready.
