- 1 lb chicken or turkey sausage
- 8 large eggs
- 1 1/3 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 20 oz hash browns
- 2 cups cheddar cheese, grated (divided)
- 1/2 small yellow onion, diced
- 1/2 bell pepper, diced (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the sausage in a skillet over medium heat until browned; drain excess grease.
- Whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder in a mixing bowl.
- Layer the hash browns in the greased baking dish, then add crumbled sausage, diced onion, bell peppers, and 1½ cups of cheddar cheese.
- Pour the egg mixture evenly over the layers.
- Top with the remaining ½ cup of cheddar cheese.
- Bake for 55-60 minutes until set and golden.
- Rest for 5 minutes before slicing and serving.
Notes
Assemble the casserole a day in advance and refrigerate. Bake for about 10 extra minutes when ready.
