Ingredients

  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup salted caramel sauce
  • 8 oz cream cheese
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt in a large bowl.
  3. Mix the vegetable oil and eggs in another bowl until well combined. Stir in the grated carrots and salted caramel sauce.
  4. Add the wet mixture to the dry ingredients, mixing until just combined.
  5. Divide the batter between the prepared pans, smoothing the tops.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  8. Beat the cream cheese and softened butter together until smooth, then add powdered sugar and vanilla until fluffy.
  9. Once the cakes are cool, spread cream cheese frosting between layers and on top, drizzling with additional salted caramel sauce.
  10. Slice, serve, and indulge!

Notes

Make-ahead tips: Wrap cooled cake layers tightly and refrigerate for up to 3 days. Frosting can be made in advance and chilled.
