- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder

- 4 large eggs
- 3 cups grated carrots
- 1 cup salted caramel sauce
- 8 oz cream cheese
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt in a large bowl.
- Mix the vegetable oil and eggs in another bowl until well combined. Stir in the grated carrots and salted caramel sauce.
- Add the wet mixture to the dry ingredients, mixing until just combined.
- Divide the batter between the prepared pans, smoothing the tops.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
- Beat the cream cheese and softened butter together until smooth, then add powdered sugar and vanilla until fluffy.
- Once the cakes are cool, spread cream cheese frosting between layers and on top, drizzling with additional salted caramel sauce.
- Slice, serve, and indulge!
