Description

Hearty roasted sweet potatoes topped with a creamy whipped feta and honey mixture, creating a delightful balance of sweetness and tang.


Ingredients

  • 3 large sweet potatoes (washed and cut in half lengthwise)
  • 2 tbsp olive oil
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tbsp honey or hot honey
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh parsley or chives (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the washed and halved sweet potatoes on a baking sheet.
  3. Drizzle them generously with olive oil and season with salt and pepper.
  4. Roast those spuds in the oven for about 25-30 minutes.
  5. Mix crumbled feta cheese, Greek yogurt or sour cream, honey, thyme, and fresh parsley or chives until smooth.
  6. Remove the sweet potatoes from the oven and let them cool slightly.
  7. Top each sweet potato half with the creamy whipped feta mixture.
  8. Drizzle more honey over the top and serve.

Notes

These sweet potato boats store well in the fridge for up to three days. Freezing is possible (without toppings) for a month.
