Ingredients

- 3 large sweet potatoes (washed and cut in half lengthwise)
- 2 tbsp olive oil
- Salt (to taste)
- Black pepper (to taste)
- 1 cup feta cheese (crumbled)
- 1/4 cup plain Greek yogurt or sour cream
- 2 tbsp honey or hot honey
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh parsley or chives (chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the washed and halved sweet potatoes on a baking sheet.
- Drizzle them generously with olive oil and season with salt and pepper.
- Roast those spuds in the oven for about 25-30 minutes.
- Mix crumbled feta cheese, Greek yogurt or sour cream, honey, thyme, and fresh parsley or chives until smooth.
- Remove the sweet potatoes from the oven and let them cool slightly.
- Top each sweet potato half with the creamy whipped feta mixture.
- Drizzle more honey over the top and serve.
Notes
These sweet potato boats store well in the fridge for up to three days. Freezing is possible (without toppings) for a month.
