- 1 lb tagliatelle (or fettuccine) pasta
- 1 lb ground beef (80/20 mix)
- 1 medium yellow onion, finely diced
- 1 large carrot, finely diced
- 1 stalk celery, finely diced
- 2 cloves garlic, minced
- 1/2 cup whole milk
- 1/2 cup dry white or red wine
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and freshly cracked black pepper, to taste
- Toppings: Freshly grated Parmesan cheese and finely chopped parsley
Instructions
- Heat the oil: In a large pot or Dutch oven, warm the olive oil over medium heat.
- Sauté the soffritto: Add the finely diced onion, carrot, and celery to the pot. Cook for 6–8 minutes until soft and fragrant, stirring occasionally.
- Add garlic: Stir in the minced garlic for the last minute.
- Brown the beef: Increase the heat slightly and add the ground beef. Cook until browned.
- Incorporate the milk: Pour in the milk and simmer for about 5 minutes.
- Pour in the wine: Let the wine reduce until mostly evaporated.
- Add tomatoes and broth: Stir in the tomato paste, crushed tomatoes, and beef broth.
- Let it cook: Reduce heat to low, cover, and simmer for 1 to 1.5 hours.
- Cook the tagliatelle: Boil salted water and cook the tagliatelle until al dente.
- Combine pasta and sauce: Drain the pasta and toss it with the Bolognese sauce.
- Serve: Dish up the Bolognese Tagliatelle and top with fresh parsley and Parmesan.

Make-ahead tips: The Bolognese sauce can be made a day in advance for enhanced flavor. Store it in the refrigerator.
