Description

A hearty and rich Bolognese sauce served over tagliatelle, embodying warmth and comfort with every bite.


Ingredients

  • 1 lb tagliatelle (or fettuccine) pasta
  • 1 lb ground beef (80/20 mix)
  • 1 medium yellow onion, finely diced
  • 1 large carrot, finely diced
  • 1 stalk celery, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup whole milk
  • 1/2 cup dry white or red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp olive oil
  • Salt and freshly cracked black pepper, to taste
  • Toppings: Freshly grated Parmesan cheese and finely chopped parsley

Instructions

  1. Heat the oil: In a large pot or Dutch oven, warm the olive oil over medium heat.
  2. Sauté the soffritto: Add the finely diced onion, carrot, and celery to the pot. Cook for 6–8 minutes until soft and fragrant, stirring occasionally.
  3. Add garlic: Stir in the minced garlic for the last minute.
  4. Brown the beef: Increase the heat slightly and add the ground beef. Cook until browned.
  5. Incorporate the milk: Pour in the milk and simmer for about 5 minutes.
  6. Pour in the wine: Let the wine reduce until mostly evaporated.
  7. Add tomatoes and broth: Stir in the tomato paste, crushed tomatoes, and beef broth.
  8. Let it cook: Reduce heat to low, cover, and simmer for 1 to 1.5 hours.
  9. Cook the tagliatelle: Boil salted water and cook the tagliatelle until al dente.
  10. Combine pasta and sauce: Drain the pasta and toss it with the Bolognese sauce.
  11. Serve: Dish up the Bolognese Tagliatelle and top with fresh parsley and Parmesan.

Notes

Make-ahead tips: The Bolognese sauce can be made a day in advance for enhanced flavor. Store it in the refrigerator.
