Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a lined mini muffin tin.
  3. Bake the crust for 8-10 minutes until golden. Remove and let cool completely.
  4. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  5. In a separate bowl, whip 1/2 cup of heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  6. Spread the cheesecake layer over the cooled crusts and refrigerate for at least 30 minutes.
  7. In a blender, puree the raspberries, sugar, and lemon juice until smooth. Strain to remove seeds if desired.
  8. In another bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold in the raspberry puree and gelatin (if using).
  9. Top the cheesecake layer with raspberry mousse and refrigerate for an additional 2 hours or until set.
  10. Garnish with fresh raspberries before serving.
