- 1/2 cup heavy cream
- For the raspberry mousse:
- 1 cup fresh raspberries
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 1 cup heavy cream
- 1/2 tsp gelatin (optional, for stability)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a lined mini muffin tin.
- Bake the crust for 8-10 minutes until golden. Remove and let cool completely.
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip 1/2 cup of heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Spread the cheesecake layer over the cooled crusts and refrigerate for at least 30 minutes.
- In a blender, puree the raspberries, sugar, and lemon juice until smooth. Strain to remove seeds if desired.
- In another bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold in the raspberry puree and gelatin (if using).
- Top the cheesecake layer with raspberry mousse and refrigerate for an additional 2 hours or until set.
- Garnish with fresh raspberries before serving.
