Quick Pickled Cauliflower & Carrots

For the Vegetables

  • 3 cups small cauliflower florets
  • 2 large carrots, thinly sliced into rounds or sticks
  • ½ medium red onion, thinly sliced
  • 3 garlic cloves, lightly crushed
  • 1 jalapeño, thinly sliced, optional
  • 2 tablespoons fresh dill, optional

For the Pickling Brine

  • 1½ cups white vinegar (5% acidity)
  • 1½ cups water
  • 2 tablespoons granulated sugar
  • 1½ tablespoons kosher or pickling salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • ½ teaspoon coriander seeds
  • ½ teaspoon red pepper flakes, optional
  • 1 small bay leaf, optional


Instructions

1. Prepare the Vegetables

Wash the cauliflower and carrots thoroughly.

Cut the cauliflower into small, bite-sized florets. Try to keep them relatively uniform so they pickle at approximately the same rate.

Thinly slice the carrots into rounds or sticks. Thinner pieces absorb the brine faster while still maintaining plenty of crunch.

Slice the red onion and jalapeño, if using, and lightly crush the garlic cloves.

2. Pack the Jars

Place the cauliflower and carrots into clean glass jars.

Add the sliced red onion, crushed garlic, jalapeño, and fresh dill between the vegetables so the flavors are distributed throughout the jars.

Pack everything snugly without crushing the vegetables.

3. Make the Pickling Brine

Add the white vinegar, water, granulated sugar, salt, mustard seeds, black peppercorns, coriander seeds, and optional red pepper flakes to a saucepan.

Bring the mixture to a gentle simmer over medium heat.

Stir until the sugar and salt have completely dissolved.

Remove the saucepan from the heat. If you’re using a bay leaf, add it to the brine or directly to the jar.

Allow the brine to cool for a few minutes.

4. Pour the Brine Over the Vegetables

Carefully pour the warm pickling brine into the jars.

Make sure the cauliflower, carrots, onions, and other vegetables are completely submerged.

Gently tap each jar against the counter to help release trapped air bubbles. Add additional brine if necessary to keep the vegetables covered.

5. Cool and Refrigerate

Allow the jars to cool to room temperature.

Once cooled, cover them tightly and transfer them to the refrigerator.

Let the vegetables pickle for at least 12 hours before tasting them.

For a stronger and more developed pickled flavor, wait 24–48 hours before serving.
