Instructions

  1. Activate the yeast: In a large bowl, combine warm milk and sugar. Stir in the yeast and let it sit for 5-10 minutes until frothy.
  2. Mix in base ingredients: Add the mashed potatoes, melted butter, and salt to the yeast mixture. Stir until well combined.
  3. Incorporate flour: Gradually add flour, one cup at a time, stirring until a dough begins to form.
  4. Knead the dough: Turn the dough out onto a floured surface. Knead for about 5-10 minutes until the dough becomes smooth and elastic.
  5. First rise: Place the dough in a greased bowl, cover with a clean cloth, and allow it to rise in a warm place for about 1-2 hours, or until it doubles in size.
  6. Shape the rolls: Once risen, punch down the dough gently and shape it into rolls.
