- Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup crushed pineapple, drained
- Topping:
- 1 cup pineapple rings, canned or fresh
- ½ cup brown sugar
- ¼ cup maraschino cherries
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased 9×13 inch baking pan.
- Bake the crust for 10 minutes until lightly golden. Remove from the oven and let cool.
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and crushed pineapple.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Arrange pineapple rings on top of the cheesecake filling and sprinkle with brown sugar and maraschino cherries.
- Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. The top should be lightly golden.
- Allow to cool completely at room temperature, then refrigerate for at least 4 hours before slicing into bars.
