    • 1 ½ cups graham cracker crumbs

    • ¼ cup granulated sugar
  • Cheesecake Filling:
    • 16 oz cream cheese, softened
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1 cup crushed pineapple, drained
  • Topping:
    • 1 cup pineapple rings, canned or fresh
    • ½ cup brown sugar
    • ¼ cup maraschino cherries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased 9×13 inch baking pan.
  3. Bake the crust for 10 minutes until lightly golden. Remove from the oven and let cool.
  4. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and crushed pineapple.
  6. Pour the cheesecake filling over the cooled crust and spread evenly.
  7. Arrange pineapple rings on top of the cheesecake filling and sprinkle with brown sugar and maraschino cherries.
  8. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. The top should be lightly golden.
  9. Allow to cool completely at room temperature, then refrigerate for at least 4 hours before slicing into bars.
