A light and fluffy Pineapple Juice Cake with a sweet glaze, perfect for summer gatherings.
Ingredients

- 1 box yellow cake mix
- 1 cup pineapple juice
- 1/2 cup vegetable oil
- 3 eggs
- 2 cups powdered sugar
- 3/4 cup pineapple juice (for glaze)
- 2 tbsp melted butter
Instructions
- Preheat the oven according to the cake mix instructions.
- Mix the yellow cake mix, 1 cup of pineapple juice, 1/2 cup of vegetable oil, and 3 eggs in a large mixing bowl until smooth, about 2 minutes.
- Pour the batter into a greased cake pan.
- Bake according to package instructions or until a toothpick comes out clean, about 25-30 minutes.
- Prepare the glaze by mixing 2 cups of powdered sugar, 3/4 cup of pineapple juice, and 2 tbsp melted butter in a bowl until smooth.
- Drizzle the glaze over the cooled cake and serve.
Notes
Add shredded coconut or chopped nuts for extra crunch. Serve with ice cream for an elevated experience.
