Ingredients

Scale
  • For the Cookie Base:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
  • For the Topping:
    • 1 cup crushed pineapple, drained
    • 1/2 cup maraschino cherries, halved
    • 1/2 cup brown sugar
    • 1/4 cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a saucepan, melt the brown sugar and butter over medium heat until bubbly, then remove from heat.
  7. Pour the brown sugar mixture into the bottom of a greased 9×13 inch baking dish.
  8. Evenly spread the crushed pineapple and halved cherries over the brown sugar mixture.
  9. Drop spoonfuls of the cookie dough over the fruit layer, spreading gently to cover.
  10. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  11. Allow to cool for 10 minutes before inverting onto a serving platter.
