Ingredients
Scale
- For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- For the Pineapple Filling:
- 1 cup crushed pineapple, drained
- ½ cup brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- For the Caramel Drizzle:
- ½ cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In a small saucepan, combine the crushed pineapple, brown sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes. Let cool.
- Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper, making an indentation in the center of each cookie.
- Fill each indentation with a teaspoon of the pineapple filling.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Drizzle with caramel sauce before serving.
