If using fully cooked smoked sausages, rinse and pat them dry. Cut them into 3–4 inch pieces if desired so they fit easily into the jars.
Pack the sausage pieces into a large clean glass jar, or divide them between two quart-sized jars.
Add the sliced garlic, onion, bay leaves, black peppercorns, mustard seeds, coriander seeds, smoked paprika, fresh dill if using, and crushed red pepper flakes evenly throughout the jars.
