Ingredients
Here’s a breakdown of what goes into this classic, warmly spiced pickled beet recipe and why each ingredient plays a role.
For the Pickled Beets
- 2 lbs fresh beets, trimmed — The star of the recipe, providing that classic earthy, sweet flavor and deep red color.
- 2 cups white vinegar — Forms the tangy, acidic base of the brine.
- 2 cups water — Balances the sharpness of the vinegar so the brine isn’t overwhelming.
- 2 tbsp pickling salt or kosher salt — Enhances the overall flavor of the brine and helps preserve the beets.
- ¼ cup granulated sugar — Balances the acidity of the vinegar with a touch of sweetness, essential to the classic sweet-tangy pickled beet flavor.
- 4 cloves garlic, thinly sliced — Infuses the brine with bold, aromatic garlic flavor.
- 1 small cinnamon stick — Adds warm, cozy spice that’s a signature element of classic pickled beets.
- 1 tsp whole black peppercorns — Adds a mild, warm heat and subtle spice.
- 1 tsp mustard seeds — Provides a slightly tangy, sharp flavor typical of classic pickling spice blends.
- ½ tsp whole cloves — Contributes a warm, slightly pungent spice note in small but impactful amounts.
- ½ tsp allspice berries — Rounds out the spice blend with a warm, slightly peppery, clove-like flavor.
- 2 bay leaves — Adds subtle aromatic depth throughout the pickling process.
Instructions
This recipe involves boiling and peeling the beets before pickling them in a warm, spiced brine. Here’s exactly how to make it.
Wash the beets thoroughly, leaving about 1 inch of the stems attached to prevent the color from bleeding during cooking.
Place the beets into a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 35–45 minutes, or until the beets are fork-tender.
Drain the beets and transfer them to an ice bath until cool enough to handle.
Rub off the skins using your hands or a paper towel, then trim the ends and slice the beets into rounds, wedges, or bite-sized chunks.
Pack the sliced beets into a large clean glass jar, or divide them between two quart-sized jars.
Add the garlic, cinnamon stick, bay leaves, black peppercorns, mustard seeds, cloves, and allspice berries throughout the jars.
In a medium saucepan, combine the white vinegar, water, pickling salt, and sugar.
Heat over medium heat, stirring until the salt and sugar are completely dissolved. Do not boil.
Carefully pour the warm brine over the beets until they are fully submerged.
Seal the jars tightly and allow them to cool completely to room temperature.
Refrigerate for at least 48 hours before serving. For the best sweet and tangy flavor, allow the beets to pickle for 5–7 days.
