- 2 flatbreads (naan or pita)
- 1/2 cup basil pesto
- 1 1/2 cups shredded rotisserie chicken or cooked chicken breast
- 1 cup mozzarella cheese, shredded
- 1/2 cup goat cheese or feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- Fresh basil leaves, for garnish
- Olive oil, for drizzling
- Cracked black pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking tray or pizza stone with parchment paper.
- Spread the flatbreads on the tray and generously spread the basil pesto over them.
- Layer the shredded chicken evenly over the pesto, followed by the mozzarella cheese, cherry tomatoes, red onion slices, and crumbled goat cheese or feta.
- Bake for 12–15 minutes until the cheese is melted and bubbly and the edges are golden brown.
- Finish with fresh basil leaves, a crack of black pepper, and a drizzle of olive oil before slicing and serving.
Notes
You can pre-assemble the flatbreads and store them in the fridge before baking them. For a crispy delight, use an air fryer instead of an oven.
