Description

A delightful Pesto Chicken Flatbread Pizza that combines vibrant flavors and satisfying textures, perfect for any occasion.


Ingredients

  • 2 flatbreads (naan or pita)
  • 1/2 cup basil pesto
  • 1 1/2 cups shredded rotisserie chicken or cooked chicken breast
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup goat cheese or feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • Fresh basil leaves, for garnish
  • Olive oil, for drizzling
  • Cracked black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking tray or pizza stone with parchment paper.
  2. Spread the flatbreads on the tray and generously spread the basil pesto over them.
  3. Layer the shredded chicken evenly over the pesto, followed by the mozzarella cheese, cherry tomatoes, red onion slices, and crumbled goat cheese or feta.
  4. Bake for 12–15 minutes until the cheese is melted and bubbly and the edges are golden brown.
  5. Finish with fresh basil leaves, a crack of black pepper, and a drizzle of olive oil before slicing and serving.

Notes

You can pre-assemble the flatbreads and store them in the fridge before baking them. For a crispy delight, use an air fryer instead of an oven.
